Exceptional Chocolate Cake

Ingredients

For the cake

  • 150 g salted butter
  • 2 eggs
  • 270 g sugar
  • 150 g flour
  • 2 teaspoons baking powder
  • 80 g cocoa
  • 1 teaspoon vanilla powder
  • 150 ml hot water
For the lemon curd filling:
  • 400 ml cream
  • 200 ml lemon curd

For the topping

  • 100 g salted butter (room temperature)
  • 150 g cream cheese
  • 150 g Nutella
  • 60 g powdered sugar
  • 20 g cocoa
  • 100 ml cream
  • Grated chocolate or Malteser for decoration
preparation

Cake

  1. Preheat oven to 175°C.
  2. Grease a baking pan (diameter 20 cm) with butter.
  3. Assemble the Ankarsrum using the mixing bowl and whisk.
  4. Melt butter in a saucepan.
  5. Gently whisk eggs in the mixing bowl and add melted butter.
  6. Mix dry ingredients and add to mixing bowl.
  7. Add water and mix dough.
  8. Bake for 25-30 minutes.
  9. Let cool and place in the refrigerator.
  10. Divide the cake into three layers.

Lemon curd filling:

  1. Assemble the Ankarsrum using the mixing bowl and whisk.
  2. Whip the cream until stiff and fold in the lemon curd.
  3. Spread the cream on the cake bases, layer them on top of each other and chill overnight.

Topping:

  1. Assemble the Ankarsrum using the mixing bowl and whisk.
  2. Mix all ingredients except the cream until fluffy.
  3. Whip the cream separately until stiff and mix with the chocolate cream.
  4. Cover the cake evenly with the cream and decorate with grated chocolate or Maltesers.
